When I was in college, there was one lunchtime favorite that was always guaranteed to put a smile on my face. The Carvery! They would bring in all kinds of meats, one for each day of the week, offer you a dizzying array of bread to choose from, and then dress it up with lettuce, tomato, mustard, all my favorite sandwich fixins’! What I have discovered isn’t QUITE that good, but it still rocks my socks in a very pleasant way. Behold:
I have been reading a lot lately about how the nitrates in lunchmeat are just not that great for you, but sandwiches have always been an easy way to transport my lunches, get a lil protein in my system mid-day, while still munching on something that tastes good! When I indulge this convenience, this is my new lunchmeat of choice. it is tender and moist and doesn’t get all slimy like some lunchmeats. I highly recommend. I had mine today with just a little bit of horseradish mustard, but I can imagine it would also be good with some of my other favorites, avocado, tomato, lettuce and the like.
This is a bit of a weird week since I will be gone on business Wednesday – Friday night – we didn’t want to overstock on groceries and have them go to waste, so I will be busily creating dishes out of the “leftovers” in our house for breakfasts, lunch and dinner today and tomorrow.
