As I mentioned previously, the husband and I created a delectable lasagna on Saturday night. While it was super delicious, it was HUGE! We’ve had a couple rounds of leftovers, but even I was getting cheesy overload (which is saying a lot, since I love cheese mucho mucho!) I dug a little leftover remix inspiration from Julie at Peanut Butter Fingers. I wasn’t sure how the remix would turn out, but it was pretty good!
I picked up some spinach and mushrooms at the grocery store on my way home. I picked up olives also, but totally forgot to use them. Figures. I sauteed the spinach and mushrooms in some olive oil, while I heated up the leftover lasagna and a couple of extra pieces of eggplant. The spinach mixture served as a nice base, to which I added some chunky tomato sauce (also leftover from the lasagna we made). On top, I put some lasagna “croutons.” The whole mixture looked something like this:
Of course, it’s not the most innovative or spectacular dinner in the world, but I thought it tasted delicious, and it is a great step in the adventurous kitchen direction!!!
