Two Perfect Meals

What better way to follow-up a post about two perfect workouts than with two perfect meals? I must say that today, I am 2 for 2 in terms of deliciousness AND nutritiousness. It’s not every day that this happens.

BREAKFAST:

After a spectacular workout and a snowy trudge home, we needed something with both warmth and protein to fill us up. Of course, husband pulled out his most impressive bag of tricks and cooked a very familiar breakfast. But this time (perhaps knowing that it would be photographed for posterity) he plated and cooked the most visually appealing breakfast I have ever been served. Picture below, and open for votes on the “Prettiest Breakfast Ever” title:

Nothing spectacularly out of the ordinary – toast with a fried egg, veggie bacon and an avocado! But this little lady was certainly jonesing for a taste:

You’d think after starting out that perfectly, eating would be all downhill from that point on. WRONG! Sometimes our boss orders lunch for the whole office. Today, because it was snowing cats and dogs, he sprung for a free meal at my new FAVORITE lunch place, Roti! It’s a smorgasbord of deliciousness, that’s what it is. I ordered a Moroccan Rice Bowl with Spanish Eggplant, Kalamata Olives and Feta Cheese. It looked like this (before I gobbled it up, of course)

Fraught with delicious veggies and jam-packed with taste.

Hopefully dinner can live up to these fabulous precursors. If not, I guess I’ll just have to open some of our fabulous Napa Wine!
