I’m not sure if it is a learned behavior or just plain animal instinct, but I always make WAY more food than is necessary. Most of the time, this isn’t a huge problem, because Husband and I have the remnants polished off before either of us can get tired of the dish. Alternatively, if there is so much food that we know we won’t be able to finish it, we freeze it, and then take it out at a time when we don’t have the capacity or energy to cook. Unfortunately, none of the stars lined up this time. We made some amazing buffalo chicken on Saturday, for our guests, and it was a big hit! The amount of leftovers afterward, however, was insane! And with me being the only one chowing down on the chicken, it’s taking a long time to disappear! As previously mentioned, normally at this point, I would turn to the freezer. Buuuuuuuut, apparently I’ve employed this tactic one too many times – all our containers are in use! That can only mean one thing: lots more chicken is in my future. Luckily, I’m a gal that loves leftovers. I keep telling myself: “Tomorrow, I’ll get creative and do something different.” The leftovers, however, are a crutch – and I have yet to do anything but employ my microwave this week. Hey, there’s always tomorrow.
