Just put some hummus in it

Since we made fairly massive quantities of both the lasagna and the mushroom/black bean chili mixture, we’ve been eating a fair amount of them for both lunch and dinner this week. Needless to say, we’re both looking for some ways to inject some life into the leftovers. Some people might say, “Suck it up. Rub some dirt in it.” I, on the other hand, prefer hummus:

SO I took some of my quinoa, the REMAINING Black Bean/Mushroom Chili (Yes, I conquered it!) and mixed it together with some of the sun-dried tomato hummus pictured above:

It was positively amazing. I’m almost sorry the leftovers are gone because it means I can’t repeat it again without making more Chili 🙂
