Nothing I ate today was out of the ordinary. But it was nice to have some routine and structure! We started the day with a reliable egg-y breakfast:
Mushrooms, spinach, eggs (no cheese! yay us) – and it was accompanied by my favorite morning beverage in a non-holiday mug:
Despite the completely routine nature of this breakfast, it kept me focused and working hard until lunchtime (which today, occurred at 2PM!!!!!)
I started with an appetizer of chick peas leftover from my salad:
Followed by a sandwich lovingly made by Husband:
We went to the gym after work (how did this week turn into an afternoon gym routine week!?) and of course it was packed. So instead of messing around, I just hopped on the treadmill for … FORTY MINUTES! My quads are screaming from all the sprints, hills and everything else – but I’m still pretty psyched that I got through the whole thing, bringing my grand to total this week to 75 minutes … I don’t even know if I will get to the 45 minutes I would need to complete the two hour requisite, but I beat my total from last week, so improvement is always good. Maybe next week!
For dinner, we debated heavily: scrounge up leftovers? Or order Chinese? We even went so far as to pick out what we would order … buuuuuuuuuuuuuuut homemade, cheap and healthy won out (I love it when that happens!) Husband threw a whole mess of stuff in our rice cooker:
Quinoa, mushrooms, spinach, garlic, onions and some randomly selected spices. It turned out wonderfully!
Rest of the night looks to be turning out wonderfully routine as well:
