Since I had a little bit extra time this morning, I figured it would be a great time to use the “set it and forget it” type cooking – hooray for Crock Pots!
I also decided to take this opportunity to get some freezer cleaning done. We had frozen some pork chops a couple of months ago, that Dan’s parents had given us, but we couldn’t eat at the time! I also put a bag of frozen peas and carrots in there that were suffering from a little bit of freezer burn. I added some white kidney beans, a bit of veggie broth, and flipped the switch.
When I got home, it smelled delicious! Luckily Penny had refrained from eating it while I was gone, so I rewarded her by taking her for a walk (it wasn’t freezing out, which was great!) I decided to make good use of the time we were outside and throw some Quinoa in the rice cooker to enjoy with the crock pot creation.
I built my bowl with a layer of Quinoa, some “stew” and then added a bit of cheese and some avocado slices for some texture and healthy fats. I decided to end my cheese ban, and have re-resolved to eat cheese where necessary and in moderation:
It was wonderful and filling. I only had one bowl and I was full! Quick, easy and well-balanced! That’s what I call perfection in a Crock Pot.
