Another take on PB & J

I still don’t have time to do any recapping that I would like to do from the 5K and the weekend (maybe tonight?) BUT I had a breakfast this morning that I was very excited to share.

Despite the fact that it’s mid-April, Chicago decided to throw just a bit more snow our way last night and this morning. While it wasn’t enough to be more than a slight annoyance, it put me in the mood for a warm and toasty breakfast. I originally set my alarm for 5:30am to get in a “light cardio” workout this morning, but my old bones (read: I’m not 21 anymore, so this weekend of festivities was particularly hard on my body) screamed in protest. I shut the alarm off and got another hour or so of blissful slumber. During this brief respite, I dreamed of a wonderful, peanut buttery breakfast. And this was born:

Peanut Butter, Jelly and BANANA oatmeal! How’s that for a Monday morning pick-me-up? Very easy to make (just mix PB2, some sugarless jam/jelly plus banana into a steaming bowl of cooked oats and you’re good to go!) and portable for when you’re running late (hence the Tupperware). I could definitely get used to starting my day like this.
