If we have plans on Friday nights, getting dinner on the table can be a little hectic. After getting home from work, we are both scrambling to shower, change, walk and feed the dog so we can head out the door as soon as possible. A lot of times, if our plans don’t include dinner, we pay a visit to Jimmy John’s OR we plan a Crockpot Dinner that is ready the moment we get home. This week, we didn’t have time to prepare the Crockpot in the morning and we just weren’t feeling Jimmy John’s. When I called Dan to tell him I was on the way home from work, I asked if I should pick something up for dinner, but he assured me that he was taking care of it.
The moment I walked in the door, I smelled something welcoming and heavenly. Dan was out walking the dog, so I peeked in the oven and LOVED what I saw.
Anything that include potatoes is fine by me, but this dish ALSO had peppers, onions, chicken and salsa. It was a quick version of a Crockpot dish that he used our cast iron skillet to cook. Kudos, Dan! I’ll let you handle Friday night dinners any time 🙂
