It’s no secret that I love to celebrate. Whether it’s the Fourth of July, St. Patrick’s Day or my dog’s birthday, I’m all about going all out for most any occasion. My favorite events to mark, however, are my friends’ birthdays! Recently, I made S’mores cupcakes to celebrate Kris’ birthday, so I knew that I would have to come up with some delicious treats for Kat and Brian. They graciously decided to share their birthdays with all of us fortunate Chicagoans this past weekend. My instinct, of course, was to cupcake it up. As a nod to the approaching autumn season (and to satisfy my ever present craving for everything PUMPKIN) I decided on pumpkin cupcakes with cream cheese frosting.
Generally, I turn to my fellow bloggers for mind-blowing recipes and ideas. This time around, however, I fell back on an oldie but a goodie … Betty Crocker! The recipe is easy to follow, so I rolled right through this one. I was very happy to see my beloved pumpkin back in action in my kitchen. Fall is SO CLOSE!
Penny was the most excited about the pumpkin.
Between the two of us, we got them in and out of the oven without incident.
I also decided to top these beauties with chocolate candy pumpkins. Luckily, I learned my lesson from the last time I melted candy, and got it perfect THE FIRST TIME! The end result of all this was just splendid.
Because that was just not quite enough, I added in one extra element … Birthday Cake Batter Bark! I got the idea from Pinterest, and the recipe from Stephanie Cooks. It was much easier than I anticipated, and in very little time, I had delicious (and addicting!) birthday treats.
Finally, everything was assembled and wrapped. We were ready to party!
