After a week of ordering Indian food, scrounging at Whole Foods for meals and being out of a kitchen to cook in, we were finally back in our apartment and ready to rock! Dan took the first crack at it with a new dish that was a smashing success.
He made Mediterranean lettuce wraps. He sauteed some spinach, olives, feta and tomatoes, created a sauce of Greek yogurt with cucumbers and plated the whole shebang on some bib lettuce with quinoa in the middle. It was delicious and low-cal! I highly recommend, plus it didn’t seem to take him very long.
