Healthy Cupcakes?!

Sounds like an oxymoron, but apparently it’s not! In reading through Shape.com, I found this delicious, clean eating recipe for pumpkin cupcakes with chocolate pumpkin frosting! It originally came from a new food blog obsession of mine, The Gracious Pantry. I immediately pinned it for later, saving it for the right occasion. Which turned out to be OSCAR NIGHT! I don’t watch award shows – I know this makes me a freak of nature – but it still felt appropriate to celebrate. We rented “Midnight in Paris” and I got to work on dessert.

The recipe calls for whole wheat pastry flour, which I was unable to find, but I simply combined all-purpose flour and whole-wheat flour, sifted them together and I don’t think the end result suffered at all. The frosting is amazing, and contains NO sugar. It’s applesauce, cocoa powder, vanilla extract and that’s about it! I loved the dark chocolate bittersweetness to it.

Add a few colorful sprinkles for festivity (Dan picked them out) and you’re good to go.

The one thing I will say is that at a first tate, these are SO moist and delicious, but if you leave them around for a few days (please don’t do that!), they can get a little dry.

    • I know, I can’t believe I did either. I’m always trying to save the best for last 🙂 the movie (IMO) was PHENOMENAL! It made me want to book tickets to Paris ASAP!

  1. If you are ever looking for whole wheat pastry flour again, check the bulk section. I get it in the bulk section at my food coop. You might be able to find it at WholeFoods or some other ‘natural’ grocery store in the bulk section. slash by the way, sounds yummy!
