Better than BK’s fish sandwich

Now that it is the season of Lent, commercials for fish sandwiches at fast food joints are running rampant. Inspired by the concept but unwilling to pay for fried fish-sticks on a bun, I set out to make my own fish creation.

I took the skin and bones from some salmon filets, chopped them up, and throw them in the food processor along with some kalamata olives, capers, red onion, an egg and spices.

Whirl it up a couple of times…

I took this mixture, formed patties and then seared them in a pan on medium-high heat. I served them on a ciabatta bun with a greek yogurt/mustard spread, tomatoes and lemon-infused, steamed broccoli.

Next time, I will make a better cucumbery Greek Yogurt sauce for the top. But it was still a pretty good weeknight meal. And no Catholic guilt for dessert.
