Though Dan and I are not exactly the BEST Catholics, we do know the importance of fish during Lent! So I have been experimenting with all kinds of maritime treats. This time, we attempted Sea Bass with a Coconut Curry sauce. The recipe I (sort of) followed is here at SkinnyTaste. I added a bit more curry (both paste and powder) than I should have, and our house STILL smells pungently. I also didn’t have any coconut milk, so I added a bit of unsweetened Almond Milk and then a bit of coconut oil. I served up some Kale with tomatoes and avocado on the side, as well as a bit of mango for sweetness.
Sidenote – this dish is a dangerous one – I used our microplane to grate the ginger into my curry sauce and grated the knuckles on my right hand – oops!
