In keeping with the recent trend of consuming one fish dish a week (whether it be related to Lent or not), we had another winning combo! I seared some scallops with just salt and pepper, and served them alongside green beans, tomatoes and potatoes. It was simple, tasty and absolutely perfect! Scallops are a great alternative for people who aren’t into “fishy” tasting fish. They are mild, and even a bit sweet. They are also a great source of Vitamin B-12 and Omega-3 fatty acids. Enjoy!
