Killer Tofu

Anyone else remember the song/band from the Nickelodeon show Doug? In case you don’t, here they are – THE BEETS singing Killer Tofu:

Last week, Dan decided to put together a veggie dish for dinner. It ended up being a total winner. Here’s the recipe:

Dan’s Killer Tofu

1 head of broccoli, chopped into bite-sized pieces
1/2 bunch of kale, chopped into bite-sized pieces
1 container of tofu
1 cup of barley
2 cloves of garlic
1 bay leaf

Directions (these came from the master, Dan):

I’ve learned that when cooking most grains, it’s best to cook it in parts 2:1, water to grains. So I dug out a wide frying pan and filled it with 1cup of vegetable broth. Once that warmed, i dumped in the 1cup of barley and kept the temp up until it hit a boil. At that point, I turned the flame down to a simmer and added the other cup of water.
After about 20mins, i dumped in the chopped kale, broccoli and tofu with a solid handful of spices i can’t actually recall other than your typical salt and pepper.
That continues to simmer until the kale is wilted and the water is cooked almost entirely down. Also taste the barley to make sure it’s relative soft. Then pour the contents into a bowl, mix and eat. DONZO.
and THAT is another recipe. Two in one week – BOO YEAH! Though I guess technically, one of them is Dan’s. What can I say? It’s why I married him.
