Last weekend, Dan’s sister, Kristyn was in town.
We had a wonderful time, but a lot of our activities included drinking beer, eating wings and indulging in Chicago-style pizza (good thing Dan and I took a long walk and went for a run to counter-balance!)
So on Sunday night, Dan and I were ready for something light, but we wanted to mark the Cinco de Mayo occasion (no more Andrea and Kris to celebrate with us … 😦 )
We took a page out of my FAVORITE recipe source … Clean Eating Magazine !!! We tweaked a few things and came up with lean tacos that featured a lean cut of beef that simmered in the Crock Pot for five hours with onions, jalapenos, tomatoes and spices. We added some low-carb tortillas and rolled up some of our favorite fixin’s to make a wonderful meal.
This is what the roast looked like, simmering away. We were unable to find a brisket as originally planned, so this is what we ended up with this time. Next time, BRISKET tacos! Here’s the end-product:
PLAIN Greek Yogurt serves as the perfect sour cream substitute (I have always been a huge sour cream fan, so if I have been converted, anyone can be!). White Men Can’t Jump served as the perfect backdrop for our dinner. I had never seen it and Dan loves Woody Harrelson, so we watched! It was hysterical, and provided so many lessons in ’90’s fashion.
Definitely a movie everyone should experience.
