With summer and warmer weather comes (for me) the great thrill of being able to cook almost anything you want … outside. I love the grill – the way it smells when it’s hard at work, the way it naturally encourages anyone tending to it to have a beer in their hand … and the way it lets you maximize your time outdoors for the few precious months we have of nice weather here in Chicago. Burgers and dogs are favorite standbys, but sometimes you need to spice it up! Veggie options are great on the grill too, especially when you love eggplant as much as I do. We decided to kick it up a notch with grilled tomatoes and goat cheese (an instant way to transform any dish into a new favorite) and add in a little TROUT for good measure.
It was absolutely delicious, and honestly, there is nothing better than the smell and taste of fresh basil. I recommend using it whenever possible.
