RECIPE: Mediterranean Pita Pockets

This recipe is a delicious invention of Dan’s. I highly recommend you give it a shot ASAP. Then, let me know what you think! It’s perfect for Meatless Monday, and has tons of flavor.

Mediterranean Pita Pockets


1c farro
1can garbanzo beans
1 can tomatoes
2 medium red potatoes
3 medium carrots
1/2 bunch of kale
1 small onion
1 jar Tikka masala sauce


1. Cube the potatoes to 1/4″ and chop the carrots and onion. Mix into a bowl with the masala sauce. Roast at 450 degrees.

2. While that’s cooking, cook the farro and drain the beans and tomatoes.

3. With a few mins left on the taters and carrots, toss the kale in some oil and drop into the pan in the oven with the root veggies.

4. Once everything is cooked, mix together and add more masala sauce as needed. Halve the pitas, stuff and enjoy!
